Memorial Weekend Catfish Stock at Santee Lakes

1,000 lbs. of Catfish will be stocked this Friday just in time for the Memorial Weekend!

BASS:
Larry Bethune from Santee hauled in a 10 lb. 3 oz. Bass from lake 4 using mackerel.

CATFISH:
Larry Bethune caught 4 Catfish out of lake 4 on mackerel. Average weight was 3 lbs.

Brent Cole from Lakeside caught a 3 lb. Catfish out of Lake 2 on Gulp blood nuggets.

BLUEGILL:
The Bluegill bite has improved over the last couple of weeks. The Schroeder Family camped lakefront this weekend and the kids had a blast catching Bluegill all day.

Recipe of the Week:
Fried Bluegill Sandwich
Ingredients:
• 1 cup seasoned bread crumbs
• 1/2 cup grated Parmesan cheese, optional
• 1/2 tsp. kosher salt
• 1/2 tsp. lemon pepper
• 1/4 tsp. freshly ground black pepper
• 6 eggs
• 1 TBS garlic powder
• 1 TBS onion powder
• 1-1/2 lbs. bluegill fillets
• canola oil for frying

Directions:
PREHEAT oil to 375 degrees.
In a shallow bowl, combine the first 5 ingredients. In another bowl, whisk the eggs with the garlic and onion powder. Dip fillets in eggs, then coat with crumb mixture.

In a large skillet over medium-high heat, heat oil and test cook with one fillet before cooking fillets in batches. Fry for 3 minutes on each side or until fish flakes easily with a fork, and is deep golden brown.

Butter sliced Italian bread and brown under the broiler or on the grill; sprinkling with a touch of garlic.

For Sandwich:
Top with lettuce, tomato and tartar sauce.

Adult (ages 16 and over) $9.00 per day
Junior (ages 7 to 15) $6.00 per day
Second fishing pole stamp $4.00

*One child under 7 may fish for free with a paid adult
