Escolar

Oceans & Range: All tropical and subtropical oceans worldwide — a deep-water oceanic species found in 650–3,300 feet. Caught incidentally by offshore anglers targeting Wahoo and Swordfish in the Pacific and Atlantic. More commonly encountered in Hawaiian and Pacific Island fisheries. Marketed as "White Tuna" or "Super White Tuna" in restaurants — distinct from true tuna.

Preferred Water Temperature: 60°F–75°F at the surface — primarily a deep-water mid-water column species. Found from the surface at night (when it ascends to feed) to great depths during the day.

Size & Weight: Typically 20–80 lbs. Maximum over 130 lbs. World record: 44 lbs 4 oz as a sport fish. A fast, powerful swimmer in the snake mackerel family. Important caution: Escolar contains indigestible waxy esters (gempylotoxin) that can cause severe gastrointestinal distress — consumption of large amounts is not recommended. Some countries have banned its sale.

Best Lures: Large high-speed trolling lures produce incidental catches. Large skirted lures at fast trolling speed attract Escolar.

Best Baits: Primarily caught as bycatch on deep-drop Swordfish rigs. Large whole squid at depth produce catches. Rarely specifically targeted — most commonly an incidental deep-water catch.
